Peanut Butter ‘n Banana Muffins

Here’s another Breakfast-in–a-Muffin from my own “test kitchen.” I figured if I like peanut butter and banana sandwiches, I should try the combination in a muffin. Sweetened with honey, adds another one of my favorite ingredients. In fact, I’ve avoided both white sugar and hydrogenated shortening because I used natural peanut butter. However, if you like a sweeter muffin, go ahead and add sugar to suit your taste.

Here’s the recipe:

1/3 C canola oil
1/3 C natural peanut butter
2 eggs
1/2 C oatmeal (milled fine in a food grinder)
1/2 C whole wheat flour
1 C unbleached flour
1/2 to 3/4 C honey
2 – 3 mashed ripe bananas
6 – 10 dates (chopped in food grinder)
1/2 t baking powder
1 t baking soda

Bake at 350F for 40 minutes. Makes 12 muffins.
